Mexican Rice

So, tonight we’re going to have a whole lot of leftovers. My parents brought chicken last night, so the kids can have that, we have pinto beans and that delicious butternut squash salad I made last night (so yum!), and also I’m turning the whole wheat challah I made on Friday night into crackers, we can dip in humus.

So, to meld these all together, I’ll be making Mexican Rice, using brown rice, and it seems that “SmallBirdsStudio” has already perfected it – so why mess with perfection? I’ll try it tonight 🙂
