So I had loads of brussel sprouts that I bought from the Farmers Market last week (the farmer said he just picked them from his garden that morning, so I couldn’t resist!). But a week went by and I knew I needed to use them – and fast. Introducing: Brussel Sprout Pasta – delicious! Made this for dinner last night and was worried hubby wouldn’t like it (he’s told me in the past brussle sprouts weren’t his favorite). But wow was I surprised! It came out super yummy. Next time I think I’ll add some sort of toasted nuts to it. I did add hemp seeds to it and they just added to the texture and nutrition.
I used kamut rotini pasta and Earth Balance for the butter (and no parm)… I just topped it with olive oil before serving. Delish!
